I would eat them for every meal and often do. This dip is one of my favorites because it is so easy and we often have the ingredients laying around. It is perfect for the warmer months because no oven no cooking — just mix the below ingredients together and you’re golden.

In a large mixing bowl combine the following ingredients:

  • 6 oz Cream Cheese
  • 1/2 cup Mayo
  • 1/2 cup Sour Cream
  • 2 cups Shredded Mexican Blend Cheese
  • 1 can Rotel (Rotel has varying heat versions depending on your taste. I usually go with original or mild)
  • 1 can Sweet Corn
  • 1 can Green Chiles
  • Chopped Green Onion

Serve with tortilla chips — preferably scoops.

Gluten Free Party Pizzas AKA Pizza “Ryes” https://www.sociableceliac.com/2021/01/05/gfpartypizza/ Tue, 05 Jan 2021 16:30:51 +0000 https://www.sociableceliac.com/?p=2791 My mom used to make a GIANT batch of pizza ryes and freeze them so we could heat up a few at a time. For some reason I always associate them with New Years Eve so I decided to take a stab at making a gluten free version because rye = gluten.

Ingredients

  • 1/2 pound ground beef
  • 1/2 pound pork sausage
  • 1/2 pound velveeta cheese
  • 1 loaf of gluten free bread. I used Canyon Bakehouse Ancient Grain.
  • 1 tablespoon ketchup
  • 2 tablespoons worcestershire sauce
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon pepper

Directions

  • Preheat your oven to 350 degrees.
  • Brown your beef/pork in a large pot. I just mixed them together because why the heck not.
  • While the meat is browning, start toasting your bread slices. In hindsight, I absolutely could have done this a more efficient way but I used my 2 slice toaster for all ~15 slices 😂. I would probably put 4+ in my toaster oven next time. I did a medium toast, sliced the pieces in half, and laid them out on a baking sheet.
  • Once the meat is fully cooked drain the grease.
  • Cube the velveeta cheese and add into the pot with the meatz on medium heat stirring regularly.
  • Once the cheese has melted slightly add the spices, worcestershire sauce, and ketchup.
  • Put a lid on the pot and stir every few minutes until the cheese is completely melted.
  • Once the mixture is nice and melty, scoop it out onto your bread slices.
  • Pop into the oven for about 15 minutes or until the edges of the cheese mixture start to get crispy.
  • Let cool and freeze.
Giant bubbling pot of gelatinous cheesy meaty deliciousness.

Reheating Instructions

To reheat the frozen party pizzas, put in oven at 350 for ~20 minutes or until the topping has melted through.

Pro tip: if you have left over mixture like we did, warm it up and eat it with tortilla chips.

STL Date Night on the Mississippi | Gateway Arch Riverboat Cruise https://www.sociableceliac.com/2020/09/16/date-night/ Wed, 16 Sep 2020 14:14:40 +0000 https://www.sociableceliac.com/?p=2663 Finally, a date night for the newlyweds (how long are we considered newlyweds??)! The Gateway Arch so kindly invited us out for a date night on their Skyline Dinner Cruise on the Riverboats. They are currently offering a few different cruises that run during the afternoons and early evenings. While they don’t have their full line-up due to COVID, they update their website frequently as they add new cruises. And speaking of COVID, we felt super safe and comfortable with their COVID guidelines. All the wait staff wore masks and gloves the entire time and guests were required to wear masks when not at our assigned tables which were properly spaced out. Now for the fun stuff!

The Skyline Dinner Cruise starts boarding at 5:30pm and takes off promptly at 6pm. We had the most beautiful second deck seats right at the window for max barge viewing (Sam’s favorite part). It is really cool to see the riverbanks from a new perspective. We were able to find the AB and Lemp breweries from the boat which was super neat. When the boat arrives back at the dock at 8pm you get an awesome view of the skyline (hints the name) and the lit up Arch. I hadn’t seen the new Arch grounds lit up at night and it was gorgeous!! The two hour ride is the perfect amount of time to get a few drinks from the bar (paid separately from the ticket/meal cost), finish our food, and head to the top deck to cruise back to the dock. There is also some fun live music to listen to during the trip.

They are currently doing plated food instead of their usual buffet style meals due to COVID. This allowed them to tailor to my plethora of intolerances. Of course, no bread or dessert for me but that is okay because the salad and main course was more than enough. The strawberry and feta spinach salad was delicious. The mashed potatoes were deliciously garlic-y and I liked the beef, as well. I would have preferred a rarer steak but I like my beef extremely rare so I am sure the majority would have been fine with it! It was a super fun and relaxed date night and I can’t wait to try out some of their other fun cruises like the Blues Cruise and a Drag show when they are offering them in the future. They run until November, weather permitting.

Buffalo Chicken Chili https://www.sociableceliac.com/2020/02/06/buffalo-chicken-chili/ Thu, 06 Feb 2020 15:29:16 +0000 https://www.sociableceliac.com/?p=2450 I truly didn’t know how this was going to turn out because I measured nothing and have never made this before. That being said, it turned out incredible so I am going to attempt to recreate the recipe for you guys! You could definitely adapt this for the InstantPot but I am terrified of mine and prefer to dump and forget on my trusty 8 quart Crockpot. To each their own.

Ingredients:

  • 3-4 medium to large chicken breasts (depends on how much chicken you want in your chili)
  • Whole medium red onion diced
  • 15oz can of whole kernel corn
  • 6oz can of Tomato paste
  • Half a block of cream cheese
  • 6 garlic cloves minced
  • Onion powder to taste
  • Black pepper to taste
  • 1 cup of hot sauce or more if you like things on the spicer side (this is my favorite)
  • 2 cups chicken broth (I like this brand because they come in individual 8oz containers)
  • 16oz Navy beans
  • 1oz Packet of ranch seasoning (I used this one)
  • Cornstarch (for desired thickness)
  • Green onion for garnish

Directions:

  • Add all of the above ingredients to your crockpot except for the cornstarch and green onion. I like using a crockpot liner for easier clean up.
  • Let ingredients cook on high for 4-5 hours or low for 6-8.
  • Once chicken is fully cooked take it out and shred it.
  • Before adding the chicken back in, stir in cornstarch to get desired thickness. I like THICK chili so I used around 3 tbsps.
  • Add chicken back in and serve with chopped green onion and sour cream!

I had such an awesome experience with the whitening trays so I was really excited to try another one of their products.

I have extremely sensitive teeth and gums so at first I was a little nervous about the toothbrush being “too powerful”, however, it has 5 different settings and there is even a sensitive setting which has been PERFECT for me. 

My favorite part about this toothbrush is the auto-interval smart timer for timed brushing aka it pauses for a split second every 30 seconds so you can keep track of how long you brush. I have never been great at timing my brushes so this has really improved my routine! Incorporating the cariPRO into my whitening routine is going to have my teeth looking tip top shape for my May 2020 wedding.

Chef Brian Hale, previously Executive Chef of Chase Park Plaza and Monarch, will be creating a one-night-only, delicious 5-course menu that is made without any of the “Big-8” Food Allergies: Milk, Eggs, Peanuts, Tree Nuts, Fish, Crustacean Shellfish and Wheat. The inspiration for the event was to spread awareness of food allergies, create a unique event that is accessible to those with food allergies, and demonstrate that eating with food allergies can still be delicious. The dinner is hosted by THE BHIVE at Brennan’s to benefit AAFA-STL. It is the 36th Dinner in THE BHIVE’s This is Not a Restaurant series.

2 mason jars – I used these
1 cup water
3/4 cup white vinegar
1 tbsp Himalayan pink salt
2 medium sized cucumbers (slices or speared)
Minced Garlic (~4 tsp split or more 🙂 )
Pepper (to taste)
McCormick Garlic Ranch Seasoning (to taste) – get it here

Directions

  • Wash and slice the cucumbers to your desired shape. I did slices this time!
  • Place cut cucumbers in your mason jars and set aside.
  • In a sauce pan, add the water, vinegar, and salt. Bring to a boil and ensure all the salt has dissolved.
  • Pour vinegar mix into the mason jars over the cucumbers.
  • Add about 2 tsp of minced garlic to each jar, shut lid and swirl around.
  • Next we add the seasoning. You can really add anything you want (make them spicy with red pepper flakes, make them dill!)
  • I added about 2 tsp black pepper and 2 tsp of the Garlic Ranch Seasoning.
  • Place in fridge for 4-6 days and enjoy!

Do you love coffee, chocolate, and alcohol? Because I sure do. I’ve teamed up with Secret Squirrel to show you a fun cold brew cocktail for the summer.

For this recipe I used two simple ingredients: Secret Squirrel Dark Chocolate Mocha and Godiva Chocolate Liqueur.

Directions: Grab your favorite cocktail glass, add ice, 1.5 oz of Godiva Chocolate Liqueur, 8 oz of Secret Squirrel Dark Chocolate Mocha Cold Brew, and stir it on up. That’s it!

Mix it up (literally lol) and add all the ingredients x2 plus some extra ice to your blender for a yummy blended cocktail perfect for sitting out by the pool with a friend.
