Udi’s Chicken Alfredo

I’ll start out by saying that I was not expecting the best from this frozen meal option from Udi’s. I haven’t been having the best luck with Udi’s products lately and I was feeling discouraged. However, I was happily surprised. My mom and I were looking for a quick and easy meal one night (most nights) while we were shopping at Target. My dad was out-of-town and we were feeling lazy. We came across this “DIY meal” in the frozen section of our local Target and decided to give it a try. It was $8.99 and serves two. This seemed high for us a first but we weren’t going to get a quality meal for $4.50 a person if we went out to eat so we went for it. This particular meal had chicken, broccoli, and pasta all covered in a yummy alfredo sauce.

It was super easy to make, which I will never complain about. Easy to make meals are my favorite. Took about 10 minutes and as you can read below there is not much to it. All you need is a pan and a stove. I am not a fan of making these kind of meals with the microwave instructions so I do not know how it would turn out if you chose to cook the meal that way.   

I was absolutely starving by the time we started making this meal so I only got a picture of the frozen pasta in the pan and not the finished product. I have this problem a lot. There are multiple posts in my drafts as you are reading this where I got over eager with my food and ate it all before I could get a picture to post for you all. I am working on it, I promise. My only complaint about this meal is that the serving size was pretty small for two people. But if you made a side dish like some gluten free garlic bread it would really help with the portion sizes.

  1. I have been reluctant to try these-but I am glad you had a good experience. Now, my question is, where do you get gluten free garlic bread?!

    1. My go-to is to take hotdog buns and spread some butter mixed with freshly pressed garlic and some salt on them then top off with Parmesan cheese (or really any cheese) and stick in the oven on broil until the bread is toasted and the cheese is melted! Enjoy!
